Greek Salad

When life gives you tomatoes, make Greek salad!

A perfect go to on those long, hot summer days. This salad is effortless, crunchy and full of summer flavors. And, did I mention how scrumptious it is? It also pairs well with naan bread and lemon & rosemary chicken skewers.

 

 

Makes 4-6 servings

Here’s what you’ll need:

For the salad:

  • 1 English cucumber, chopped

  • 1-2 cups of fresh tomatoes, diced

  • 1 yellow bell pepper, chopped

  • 1 red bell pepper, chopped

  • ½  red onion, diced

  • ½ cup sliced Kalamata olives

  • ¾ cup crumbled feta cheese

For the dressing:

  • 4 tbsp. olive oil

  • 2 tbsp. red wine vinegar

  • 1 tsp. dried oregano

  • 1 clove of garlic, crushed

  • Fresh ground pepper to taste

In a large salad bowl, combine chopped veggies, Kalamata olives and feta cheese. In another bowl, add dressing ingredients, whisk and pour over salad. Simply toss and enjoy!
